Get Your Game on With This Venison Recipe

If you have venison loin or leg, you might want to take it out to thaw – this delicious venison marinade recipe is one you’ll want to try right away.

Marinated Venison Steaks

Ingredients:

For the Marinade:

  • 1 1/2 cups extra-virgin olive oil
  • 3/4 cup soy sauce
  • 1/2 cup red wine vinegar
  • 1/2 cup fresh lemon juice
  • 1/4 cup Worcestershire sauce
  • 2 garlic cloves, peeled and crushed
  • 1 1/2 tsp. chopped fresh parsley
  • 2 Tbsp. dry mustard
  • 2 1/4 tsp. kosher salt (add more to taste)
  • 1 tsp. black pepper (add more to taste)

For the Steak:

  • 2 pounds of venison loin or leg, cut into 6 uniform steaks

Directions:

  • Combine all marinade ingredients in a large bowl. Place venison in marinade and submerge until completely covered. Cover bowl with lid or plastic wrap. Refrigerate for 8-12 hours.
  • Heat broiler, stovetop grill pan, or grill. Remove venison from marinade; season with more salt and pepper to taste. Place steaks under broiler or on grilling surface, turning once, until medium rare – about 5 minutes per side. Allow steaks to rest 5 minutes before serving.
