Once the summer months roll in, many people enjoy spending time with friends and family. From backyard barbecues to simply relaxing on the front porch, the longer days and warmer weather make summer a perfect time to sit back and catch up with the special people in your life. Of course, no get-together is complete without the perfect snack, which is why we’re sharing this delicious yet simple salsa recipe. With ingredients you can find in the produce section (some even in your garden!), this salsa will be the hit of your next gathering – no matter how small or large!
Easy Summer Salsa
Ingredients
- 2 15-ounce cans of fire-roasted tomatoes, or 4 cups fresh chopped tomatoes
- 1/3 cup chopped white or sweet onion
- 2 cloves garlic, minced
- 1 to 2 medium jalapeno or serrano peppers (stems and seeds removed)
- 1 cup fresh chopped cilantro
- 1 to 2 medium limes
- ½ teaspoon fine sea salt (or more to taste)
Directions
- Drain canned or chopped fresh tomatoes in colander that has been placed over a bowl. Reserve any juice in case you need to add liquid to the finished salsa.
- Add chopped onion to medium bowl and cover with cold water. Allow to set for 10 minutes, then drain and rinse.
- Place garlic into a blender and pulse until it is chopped small. Scrape the sides of the blender and then add the tomatoes, onions, peppers, cilantro, ¼ teaspoon of salt, and juice of ½ of a lime. Pulse until it reaches desired texture. You may continue to add salt and lime to taste, and if the salsa is too thick, you may add back some of the reserved juice until desired thickness is reached.
- Please note – this salsa is tasty right away, but the flavors will marry even more over time, so we recommend you refrigerate for an hour or so before serving with your favorite chips.
