Camping adventures often mean early mornings and busy days. That’s why having a nutrient-packed breakfast before heading out for a day of hiking, swimming, or mountain biking is important. This breakfast recipe provides the carbs and protein you need to start the day right and can easily be prepared right on your camp stove.
Big Mountain Breakfast Skillet
Equipment:
You’ll need a camp stove and a large skillet, preferably cast iron. You’ll also need cooking utensils like spatulas, knives, and a measuring cup.
Ingredients:
- 2 Tbsp. oil, divided
- ½ pound Yukon Gold potatoes, cubed
- 1 bell pepper, diced
- 1 onion, diced
- ½ tsp. sea salt
- ¼ lb. sausage
- 6 eggs
- 1 cup shredded cheddar cheese
- Toppings of your choice (green onions, hot sauce, etc.)
Directions:
- Heat the skillet over medium heat. Add 1 tablespoon of oil and heat. Add the potatoes and cook, turning them occasionally so all sides brown, for about 10-15 minutes.
- Add ½ tablespoon of oil and bell pepper. Sauté until pepper begins to soften, about 5 minutes. Add the onion and salt; sauté until the onion is soft. Add sausage and cook until brown.
- Beat eggs in a bowl. Once the veggies and sausage are cooked, push to the sides of the skillet, and add remaining oil in the center of the pan. Add eggs and cheese and scramble until set, then fold veggies and sausage into the egg and cheese mixture.
- Remove from heat and add desired toppings; serve.
This recipe serves four people and is great even if you’re not at camp! You can easily make it on your home stove as well.
