Once the holidays roll around, many people enjoy the annual tradition of cookie baking. While we all know and love the traditional Christmas sugar cookie, gingerbread men, and fudge, sometimes we might want to find something new and unique for our holiday cookie platters. This year, why not try out these delectable Minty Delight cookies – they’re soft, buttery, and pack a tasty mint chocolate punch that will make them a hit at your holiday get-together.
Minty Delights
Ingredients
- I cup of unsalted, softened butter
- 2/3 cup confectioners’ sugar
- 2 ¼ cup all-purpose flour
- ½ tsp. salt
- 1 tsp. mint extract
- Green food coloring
- ¾ cup mini chocolate chips
- Additional confectioners’ sugar for coating cookies
Directions
- Line your cookie sheet with parchment paper.
- Beat together butter and sugar until fluffy.
- Mix in flour, salt, and mint extract until just combined – don’t overbeat!
- Add green food coloring until dough is a light shade of green.
- Stir in the mini chips by hand.
- Let dough rest, covered, in your fridge for ½ hour.
- Preheat oven to 375 degrees F.
- Scoop cookies by tablespoonful and roll into a ball.
- Bake for 7-8 minutes – keep in mind, cookies should only be lightly browned on bottom. Let them cool on baking sheet for 5 minutes after taking them out of oven.
- Line an additional cookie sheet with parchment, and dust with confectioners’ sugar. Place the cookies on the sheet and dust them with some more confectioners’ sugar.
- After cookies have cooled completely, fill a small bowl about halfway with more confectioners’ sugar. Drop cookies into bowl individually and roll in sugar until well coated.
