It’s the most wonderful time of the year, which means food, fun, and festivities. It also might mean you’re short on time. If you’ve been tasked with providing a holiday treat for a school, church, or work gathering, you might be looking for something easy, yet festive, that you can whip together. These cute Grinch-inspired cookies take the load off because they’re easy to put together using a boxed cake mix. This recipe makes about 30 cookies.
Grinch Holiday Cookies
Ingredients:
- 1 box white cake mix
- 8 Tbsp. butter, softened
- 2 large eggs, room temperature
- 2 tsp. mint extract
- ½ tsp. vanilla extract
- Green food coloring (the gel type is preferable)
- ¼ cup confectioners’ sugar
- 3 Tbsp. corn starch
- Red heart-shaped cinnamon candies
Directions:
- Preheat your oven to 375 degrees F. Line a large cookie sheet with parchment paper.
- Using a mixer, blend cake mix, butter, and eggs until well combined.
- Add the mint extract, vanilla extract, and green food coloring until the desired color is reached. Mix on low until extract and food coloring are combined. The dough should have a thick, sticky consistency.
- Whisk together confectioners’ sugar and cornstarch in a small bowl.
- Scoop dough balls that are roughly 1 ½ Tbsp. Roll in the confectioners’ sugar mixture to coat. Place dough balls 1” apart on a cookie sheet.
- Bake for 10-12 minutes, until cookie edges are set and tops appear dry.
- Immediately press one heart-shaped cinnamon candy into each cookie. Cool cookies on a baking sheet for 5 minutes, then transfer to a wire baking rack to cool completely.
- Once cookies are completely cooled, you can store them in an airtight container for up to four days.
